I am taking a course at the university called "Wellness and Anti-Aging" given by Dr. Jean Labelle. I got into a conversation with him about celiac and he was wondering whether the gliadin portion of the wheat was a protein? I believe I have read it is a protein but could someone clarify this for me please?
