This is going to be my first gluten-free Christmas. My family is
Italian American and our food is an important part of the holiday so I'm
hoping someone can offer a suggestion or two.
First, does anyone know of gluten-free lasagna noodles or big shells
(for stuffed shells)? If not, I'm willing to do homemade manicotti, but
would love suggestions for a really good gluten-free pasta dough. (Do I
need to worry about gluten in ricotta?)
Second... strufoli (honey balls). Does anyone have a recipe for a
gluten-free version? We'd usually make them with all-purpose flour, so
is there any gluten-free flour(s) that I can have on hand to just
substitute for all-purpose flour in the regular recipe?
All suggestions are welcome. I'll summarize for the list.
