Just noticed this post. Been too busy to read the list.
We love the beefalo we get. It never gets any grain, even in the winter. We
buy it directly from the farmer a whole animal at a time (we split it with
another family, and it lasts us five or six months. $3.60 per pound cut &
wrapped for all cuts. It's leaner than supermarket beef, not as dark red,
and is tender and has a very pleasant somewhat mild taste--not a strong
flavor like some older dairy-cow beef we've purchased in the past. I even
like the liver, whereas beef liver is usually a bit too strong for me. I
think it's 3/8 bison and 5/8 some standard breed of cow.
