Speaking of flax,
i have never baked with the OIL, but...flax seeds make a fabulous substitute
for eggs ( for those who wish to forgo eggs...though i don't know why...eggs
are yummy!)
i boiled seeds 1:1 in water, until it released a gel like goo...
strained goo from seed,
add to cookie dough, cake batter etc. etc (not that any of are baking
cookies or cakes ) and it works VERY well.
I happened to live with a lot of vegan/vegetarians in college, and naturally
helped out with the daily cooking chores, and during osme midnight kitchen
raids we baked like fiends...
hence the flax seed goo cookie knowledge!

i have been of late consumin g a lot of CHIA seed, it has similar
muciliginous properties and i bet could be used in a similar fashion...
i have not tried it yet...i like crunching the seeds whole and raw much
more...
