I do think Jack Challems article on celiac was right on target and I certainly do agree. Its straight forward but whats wrong with that?
When I first started the diet I was eating way too much starch and sugar, trying to make all those delicious foods I thought I was missing. I think this is what many of us do as celiacs. The gluten is the primary culprit but the excess sugar and starch is not good either. As a result, I was still not feeling well and had to cut back. Now I do not eat sugar and cut way back on the starches and feel much better. I wish someone had told me that in the beginning.
This has been my personal experience, I am not saying my way of eating is for everybody, but alot of sugar and starch cannot be good for anyone. Right?
