String beans and pea pods can be eaten raw, and are
low in carbs.  I don't know if they contain lectins
and other nasties or not, or if those develop with
maturity.

Does anyone know about sprouted beans, btw?  Does
sprouting destroy the toxins?  It does greatly reduce
the carbs and increase tbe vitamins.
