No experience myself, but know the travelling folks used to eat hedgehogs.
They would cover the hedgehog in clay and put in the fire to cook. What a
novel way to cook food. Anyway once cooked the clay would be broken open and
the hedgehog spines would stay in the clay, leaving the flesh nice and juicy.
Incidently, a similar method for preserving food was practiced by seamen. Food
to be taken on long voyages were covered in ?quicklime and left to harden
ensuring that the food would not rot. Not sure if this is good for health
though.
I also have an old herbal remedy book. The cure for bedwetting was to give 6
roasted mice to the unfortunate bed wetter. So I would have no problem with
trying them. I can just see my cats face when I start fighting her for the
mice she brings in.
I think the Romans ate Dormice. A bit different, and a lot cuddlier looking
than the average mouse.
