I can't speak about the Zone diet, but I'm afraid you're
incorrect about the Eades books being "extremely low-fat"; it's
not even mildly low-fat in its approach. They definitely prefer
fats like olive oil to very fatty meats---mainly because toxins
tend to be stored in the fat---but they aren't sticklers on the
issue. They advocate "adequate" protein intake (0.7 to 1.0 g per
pound of LBM), low carbs (25 to 60 g), with the rest of the
calories derived from fats.
Their offer three levels of faithfulness to the paleo ideal:
"purist" (fully paleo); "hedonist" (dairy, limited grains
allowed); and "dilettante" (somewhere in the middle).
(As to the rest of your post, we're in complete agreement.)
