Ok and where and when did human encounter such mega-beasts?
If me may disregard neanderthals (and it looks like) then we only have
30,000 years on humanity living in a megafauna (cold) environment.
That's the time when Cro magnon entered the cold areas.
In east africa (where we were before) weather was not cold but *dry* in
glacials. Not quite a demand for slow fatty animals.

The ice age (glaciation) ended a dozen times or so in the last 2 mio
years. For several thounsand years alterating between warm and cold
