Happy Holidays Everyone!

I hope your Thanksgiving was thankful and your holidays are off to a good
start!

Here's just a sample recipe to get your mouth watering:

CELEBRATION COOKIES
1/2  cup brown rice flour or sorghum flour
1/4  cup potato starch
2  tablespoons tapioca flour
1  teaspoon xanthan gum
1/2  cup unsweetened cocoa (not Dutch)
1  teaspoon baking soda
1/4  teaspoon salt
1/2  cup butter or oleo
1/2  cup granulated sugar
1/3  cup brown sugar
1  large egg
1  teaspoon vanilla extract
1/2  cup chocolate chips
1/4  cup dried tart cherries or cranberries
1/4  cup coconut flakes
1/4  cup chopped nuts
   Preheat oven to 350º. In medium bowl, combine dry ingredients (brown rice
flour through salt). Set aside.
   With electric mixer, cream butter, sugars, egg, and vanilla until well
combined. Add dry ingredients gradually; mix only until moistened. Don't
over mix. Fold in chocolate chips, cherries, coconut, and nuts.
   With small ice-cream scoop, place balls of dough (about 2 tablespoons
each) on cookie sheet lined with nonstick liners or parchment paper––or
sprayed with cooking spray. Leave an inch between balls to allow for
spreading.
   Bake 10-12 minutes until puffed and cracked. Cool on baking sheet 5
minutes, then transfer to wire rack to cool completely. Makes 16.
