A single gluten peptide has been identified which triggers the autoimmune
response of celiac disease. The peptide is resistant to being broken down
in the gastrointestinal tract. However, a bacterial digestive enzyme has
been identified which can break up the gluten peptide chain into harmless
pieces. This enzyme offers hope as a treatment for celiac disease by
allowing the consumption of gluten.
