It's a wonderful wheat and gluten-free bread alternative, since it contains only manioc (tapioca) flour, modified manioc starch, dry milk and salt.Combine the mix with the required eggs, cheese, oil and water. Then let your imagination run wild! The basic recipe produces soft, chewy rolls with tiny pockets of melted cheese. But versatility is this product's big advantage. THIS MONTH'S RECIPE: OLD-WORLD PIZZA
CHEBe Old-World Pizza
1) Prepare the dough according to package directions using olive oil, or a 50/50 blend of olive oil and your preferred oil. An Italian blend of shredded cheese works well.
2) Stretch or roll the dough out thin, about 1/8" thick, and place it on a pizza pan.
3) Brush the dough with olive oil and bake in a preheated, 375 F, oven for about 20 minutes or until the crust is golden brown. Remove from oven.
4) Top with your favorite ingredients (no tomato sauce on an "old-style" pizza!). Suggested toppings: sliced tomatoes or sun dried tomatoes, onions, fresh mushrooms, sliced olives, bell peppers, capers, parsley, and shredded provolone and mozzarella cheeses.
5) Return to oven and bake until the toppings are warm and bubbly.
Notes: a) The cheese may be omitted from the dough altogether if desired. Just add the liquid ingredients slowly while mixing the dough so that it does not become too sticky. b) Try adding pizza seasoning, a little oregano, or crush garlic into the olive oil while preparing the dough for added zest.
