The leaves yes, the seeds no. Wild amaranth seeds have a
bitter black outer coat that has to be processed. The
American Indians cultivated varieties that were white and
not bitter. These might be edible raw, I don't know. I eat
the leaves raw, when very young, but never more than bite
or two. They don't taste so good.
