I finally tried the rice wrappers for a dinner party I had last night (6 people, including my husband and myself, I'm the only celiac). The shrimp spring rolls were a hit, and we all enjoyed making them. I soaked the wrappers for about 30 seconds apiece in hot water, then layered them with paper towels until ready to use. Filling:
baby shrimp (purchased frozen, then thawed)
shredded cabbage
shredded scallions
shredded carrot
chopped serrano chilis
sliced red bell pepper
cilantro
fresh basil leaves
Served with plum sauce and a peanut dipping sauce. They were delicious.
The rest of the menu:
Steak with Caramelized Onions and Radicchio (served with Roquefort Butter; you can use herb butter if you don't want to risk the roquefort cheese)
Zesty Cilantro Quinoa blend by Seeds of Change
Roasted asparagus
French GF Bread - Gluten Free Pantry bread mix
Butterscotch Pots de Creme (PO de krem) for dessert
