It seems that so many people, when I tell them about celiac disease,
say, "don't worry - I know someone who had that - so-and-so grew out of it -
you'll only have to follow the diet for a year or two and then you can go
back to eating regular food."
I assume this is because they're feeling better (no more symptoms) and so
they go back to eating gluten, and the damage starts all over again... ???
It seems to help people understand the seriousness of Celiac disease if I
mention it falls into the same group of diseases as diabetes. This diet is
for life.
Any comments?
