What about Omega-3-enriched free-range organic eggs? Free-range hens
who are fed an organic diet with extra flax seed will produce eggs with
consistently higher ratios of Omega-3 fatty acids in their yolks. (The
"free-range" part is important, too, because free-range hens will
normally eat a variety of healthful fresh wild greens during spring,
summer and autumn.) I've read numerous articles (not all of them
published by the Egg Marketing Board ;> ) endorsing these as a good
source of Omega-3 fatty acids.
