I believe that the problem is that the body produces AGEs in response to
eating food that is cooked at high temperatures. AGEs in turn cause the body
to produce proteins that cause inflammation. These AGEs are formed more
readily and are more damaging when blood glucose is high because of eating
sugars or because of diabetes). Since in our Paleolithic ancestors diabetes
was probably not much of a problem neither was AGEs. Besides diabetes (Type
II) and heart trouble are diseases of "old" age (over 30) and seldom affect
procreation. So our ancestors could survive and appear to live well on meat
cooked on a fire.
Modern people who live to old age have a longer time to accumulate damage
from AGEs. For those modern people also have been exposed long term to
grains and sugars and have high blood glucose problems AGEs may be a big
problem.
I have been thinking about a theory, explained in "The body's many cries for
water", that high cholesterol levels are a natural response to inflammation
and other damage to the walls of the arteries. Even some paleo eaters still
have high cholesterol. Modern medicine just treats the cholesterol without
understanding why it is high but the AGEs could be the underlying cause. I
wonder if the paleodiet that still includes foods cooked at high heat may
not address this high cholesterol problem.
Any comments that could point out flaws in my thinking or could clarify this
matter will be appreciated here.
