see Loren Cordain's Paleo Diet- acid-base balance is mentioned a few times
and is in the index. There are references- Morris, Frassetto and Sebastian's
group do much of the work in this area. I don't think Cordain mentions the
mineral water, that's my own contribution- it's high in bicarbonate and that
will reduce acid load. Reading the labels, there is a huge variation between
brands- also some brands list bicarbonate per 100ml and some per 1000ml here
in glorious metric Australia (do you still use imperial measures?).
