After my offhand mention of my husband's fried chicken, I got several
requests to post the recipe. There's really no recipe. He just coats
chicken thighs with potato starch and pan-fries them in oil. When
they're done, he removes the chicken and adds potato starch to the pan
drippings, mixes it into a paste, and then adds milk. Stir constantly
and let the gravy thicken to your preference. Add salt and pepper to
taste. This is southern-fried or chicken-fried chicken, rather than the
batter-dipped chicken you'd get at KFC. It's definitely not an every-day
meal if you're trying to eat healthfully or watch your weight, but we
have it maybe once a month, with mashed potatoes and corn or other
veggie.
