Hi All--
Sorry to be so late getting this summary out - several
people requested one. Thanks to everyone who sent me
their suggestions:
Add another egg or more liquid
Mix in apples or appricots (or dried fruit or coconut)
Put a piece of bread in with the coffee cake
Add a hydrophilic ingredient (kefir), which takes the
place of buttermilk; i.e. pureed fruit and/or
applesauce
Put cake on a plate and invert a large colander on top
with a damp (not dripping) towel on top of the
colander
Add 1 tsp of knox unflavored geletin or add applesauce
(decrease oil by 1/2) - I think. If the person who
sent this suggestion didn't intend my translation of
decreasing the oil, email me and I'll post a
correction.
Many people said to let the cake cool, then cut into
desired serving size, place wax paper between squares
and freeze in a freezer bag or container.
Replace some of the liquid with yogurt or applesauce,
up to 1/2 cup
Add a box of dry vanilla jell-o pudding - no need to
increase liquid
Substitute cornstarch for the flour

I was hoping I wouldn't have to freeze the coffee cake
since I don't have much freezer space, but it seems to
be the best option if one isn't feeding a crowd.
I baked another coffee cake two days ago and
discovered that removing it from the oven a little
early will produce a moister cake. The baking time for
this cake was 35 minutes - I took it out at 20
minutes, but thought maybe it wasn't quite done, so I
put it back in the oven for another 5 minutes - it was
drier than the first time I baked it. So...taking it
out of the oven a bit sooner will help.
I've also cut the cake into squares and put two
squares into a Ziploc sandwich bag, removed as much
air as possible, then put all of the sandwich bags in
a large freezer bag and froze them. When the sandwich
bags are empty, I rinse them and let them dry and use
them again. (Still out of a job, so reusing plastic
food bags is something I've found can save a lot of
money with our food preservation requirements)
