Doreen,
"Cashed" pages, often found on good old google, are pages which
google stores on its own servers.  These are taken from the
original sites every so often.  The reason for this is that these
cashed pages can be searched and read to your computer much
faster than if google always goes off and gets pages from the
originating site.

There is usually a link to get you to the original site if you
need the most up to date information possible.  Usually the cashed
pages are quite adequate if you just want to find out if the site
in question is approximately what you are looking for.

"reading pages off line" makes copies of portions of the site you
have selected on your computer so you can read them any time and
as you say free up your phone line.  If this is not important to
you, and if your internet access speed is fast enough to avoid
frustration, then there is no reason to bother copying all that
stuff to your hard disk.
