in fish PUFAs can be up to 20% of total flesh lipids, and 100% within the
liver. most of this will be the beneficial Om-3s. the ratio of MUFA to SFA
seems to be much greater. in salmon it is 2:1, where 1:1 is probably closer
in land mammals. at any rate sea mammals were also prized, so that
complicates it somewhat.
