FWIW, the Andouille sausage is absolutely *the* best sausage for making
gumbo. When my mother comes up from Louisiana and brings some of the local
stuff with her, it just doesn't measure up. Now if I can just get a good
flour substitute for making roux, I can start making gumbo again next
winter. Anyone have any suggestions?
