Has anyone tried this?  I did and think it's quite good. Made some and
left them flat in the refrigerator over night withut the butter and
cinnamon sugar then used them as a wrap. Heated a little in the
microwave.

The recipe is on the Bob's Red Mill xantham gum package:
Norwegian Lefse
2 cups hot mashed potatoes ( russet potatoes or any baking potato best)
2 TB butter
l TB water or rice milk, ( I used 2% milk)
l tsp salt
l cup rice flour
l tsp xantham gum

Beat together the first 4 ingredients. Cover and chill for a couple of
hours.  Turn out on a lightly floured surface. Sprinkle the potato
mixture with half of the rice flour.  Knead for 8-10 minutes, gradually
adding the rest of the flour.

Divide the dough into equally small portions about the size of a golf
ball. Roll out to about a 6" circle. Roll around the rolling pin and
transfer to a hot skillet coated with cooking spray. Cook until lightly
browned, 4-6 minutes turning once. You can butter them and sprinkle with
cinnamon sugar or roll up and eat as bread, or wrap around a piece of
food.

To me they are a great find.  Enjoy.  Nancy
