I've been making Pumpkin Butter for almost 30 years. It's my own
recipe. When I am ambious, I get a bunch of cheese punpkins, cook them
down and then can them...but this an easy version
Pumpkin Butter
1 can pumpkin
1/2 cup honey
1 cup raisins
1 teas cinnamon
1/2 teas EACH ground cloves, nutmeg, allspice
Place all ingredients in a heavy, large pot [pumkin butter spatters]
Cook over low heat, stirring frequently until very thick...a spoon will
just about be able to stand up in it. Remove from heat and let stand.
When cool, store in frig in a covered container....will easily last a
month.
Besides eating this as a condiment, we love it in place of jelly on a
peanut butter sandwich.
