       WOW!!! I have encountered some incredibly nice people through this
system. First of all, allow me to say, THANK YOU,THANK YOU,THANK YOU!!! I
firmly believe that Celiacs are some of the nicest people that I have ever
met!
       I couldn't have had better timing on my inquistion. This weekend was
my RA retreat, and all that was served was casseroles, huge desserts, etc...
and tonight was my best friends birthday dinner at the Old Spagetti
Factory---not a good idea!! Needless to say, I am not feeling that great
tonight, and I have decided to give up any ideas of mine- that I am a
super-celiac, who is not affected by some wheat products.....it's just not
true!!
       SUMMARY:
1. Speak with the cafeteria and have them make you gluten free meals....(I
will take care of this, but there is that high risk for cross
contamination!!)
2. Ask the administration to refund your money for food and use it to buy
your own GF meals elsewhere....my parents and are are already discussing
this, not sure how it will work out with my RA scholarship!
3. Try to get a freezer and order GF froze meals...(I have a SMALL freezer
and have tried a few meals...(AMY'S), however they are a bit too pricy for my
budget..)
4. Some food to make in my room:Roll up meat and cheese,(have tried),Frito
Lay chips,Baked Potatos in microwave (I especially like topped with cheese &
bacon, or Wishbone ranch dressing..),Corn chips with american or cheddar
cheese topped or GF salsa, Corn tortillas as sandwich bread, (This was all my
mom ate for the first 6 months after being diagnosed, however she prefers
Gluten Free Panty sandwhich bread much better, as do I, but I have nothing to
bake it in...I really don't like corn tortillas with any meat but taco),GF
yogurt, rice cakes topped with anything! ( I actually tried this my first
week, but it grew quite old after I saw all my friends with real
sandwhiches!) Instant rice--toss in eggs,sausage, anything (Someone actually
suggested marinara sauce????) ehhh.....
5. GF: Wendy's chili and baked potatos--I already knew about these and make a
meal out of the chili and cheese and bacon potato. MCDonalds fries and some
other fries, McDonalds patties w/o bun, (My mom actually orders the All
American with no bread, you should see the looks from the attendant!! :) One
nice couple near Nashville actually gave me their number and would like me to
join them for an Indian cuisine downtown.....my cousin who is a quesitonable
celiac is excited to tag along!! Trust me! I will take them up on that offer!
I have never had Indian food, but here it is great!...There are several lists
of restraunts that people sent me...write me for a copy. Outback is a great
one to try!! Although the waitress and the manager at one of the local
restraunts had never heard of Gluten or Celiac...
6. Several suggested I order bread, but it is too expensive. Any who would
like to donate would be loved forever!! (wink, wink!)   :)


I have other ideas and please keep 'em coming!!

Additonal info on myself....(alot of people asked me questions to answer
about myself for further help!)

I am a  pre-nursing student at a small, christian University, I am a
cheerleader and very physically active. I DON'T have access to a kitchen and
will not until next Fall (or when I go home!!) I am from Georgia, about 6
hours away and I have NO family nearby, so I don't have anyone to send me
frozen or homecooked meals.... :(

Again thanks to all! I have had so many wonderful suggestions! Please keep
them coming and keep me informed! Also, I would like to become involved more
as an activist, I have been contacted by a few people already!! I begin exams
next week, so keep me in your prayers!!

* Oh-- my mom wanted for me to ask something for herself. She was recently
diagnosed with Celiac, she also has Hashimoto Disease and recently diagnosed
Addison's disease, she wan't to know if there are any out there with similiar
problems! She came close to death a few weeks ago, and has since regained
much of her strength! Thanks to a wonderul doctor and prayers!!
