Hi this is not strictly gluten free and I only mention it because of the
unusual cooking technique. This is Chef Marc’s website:

Francisco who has a turkey roasting technique where the turkey is cooked at
475-500 degrees for about 4.5 hours. He has streaming videos on his site to
show his theories and ideas behind preparation and cooking of the turkey.
I must warn you he was a bit tipsy when he filmed the videos (he is holding
and drinking from a large wine goblet while he gives the demonstration, but
as he says in the video “it’s my house so I’m going to drink while we
film”). He isn’t looped to the point of slurring his speech, but he’s
pretty close (remember the old “Galloping Gourmet”? Chef Marc was going for
that look I think). Anyway he gets into recipes for stuffing which of course
be careful with because of gluten if you are going to follow his recipes (do
the appropriate substitutions of course).
The link will let you see the bird preparation and his reasons for this
extreme temperature cooking process he uses. It has a lot of interesting
stuff that I never considered before and I learned a few things I didn’t
know. I don’t know if I am going to try his technique. Haven’t worked up the
