This easy caramel sauce requires patience and a few hours to make, but it is worth it! Try it over cut up apples or ice cream...delicious!
I made this on a Sunday afternoon when I was busy in the kitchen anyway... just keep it on the back burner and check occasionally.
Mix in a heavy saucepan: 1 and ½ cups sugar
1 tsp. cornstarch
½ tsp. baking soda
Add: 4 cups whole milk
2 and ½ cups heavy whipping cream
Stir ingredients and bring to a boil, stirring occasionally. Watch carefully so it doesn't boil over. Immediately turn to low, and simmer. Let cook very slowly about 3 hours, uncovered, until it looks like caramel sauce (medium-dark brown).
While cooking, watch and stir occasionally, to make sure it doesn't burn. The key here is patience; low heat to just simmering (not boiling) will give the best results.
Remove from heat. Stir in 1 T. GF vanilla
(You can add Kahlua to taste too - it adds a really rich flavor! A tsp or two is good)
Cool completely and store in refrigerator. Makes about 3 cups.
Serve warm over brownies, ice cream, sliced apples, etc.

GF KAHLUA
2 c. water
4 c. sugar
¼ c. instant coffee
1 pint vodka
1 vanilla bean
Boil sugar and water. Add coffee and cool. Add vodka. Pour into a ½ gallon bottle. Add vanilla bean. Age at least 2 months.
