Amadeus,

Thanks for your input.  I've had a package of whole flax seed in my
refrigerator for several months.  For the longest time I've kept thinking I
need to toss it out but haven't been able to bring myself to do it since it
still tastes as fresh as the day I brought it home.  Your explanation makes
perfect sense, and saves me some money.
