Hi Sarah and welcome!  If you stick with paleo foods you will definitely
lose weight.  I have lost 36.5 pounds so far (from 156 to 119.5) without
counting calories, carbs, fat grams, points or anything else!

Eating paleo is basically fish, meat, poultry, eggs, nuts, seeds, fruits and
veggies (with some exceptions) so it's a simple plan to follow.  It would be
easy enough for you to keep fresh fruit, dried fruits, nuts and seeds in
your room since they don't need to be refrigerated.  You could buy various
kinds of raw and unsalted nuts, seeds and dried fruits and put together a
nice trail mix.  Jerky is nice to have on hand.  The Shelton's brand of
turkey and beef jerky is nice because no sugary marinades are used.  One
place you can get that is at http://www.atkinscenter.com.  I don't like to
use canned fish but you could certainly use canned tuna, sardines, and
salmon.  And since you have an indoor grill you can easily cook some fish,
poultry or red meat.  Is there any way you could get a small refrigerator
and hot plate to make things easier?  Of course you can continue buying
pre-made salads (and can even buy some extra veggies like zucchini,
broccoli, etc. to cut up into those salads).  Eating out is easy, too.  If
you go to a Mexican restaurant get the fajitas, ask for extra veggies in
place of rice and beans and shove the tortillas aside.  If you get a
hamburger, skip the buns and add a salad.  It's equally easy to eat paleo at
just about any other type of restaurant or cafeteria.  Good luck!
