Quite by accident, we found out that one of our favorite take-out places uses cheese as a thickener for their pizza sauce(!). The chef, who also works in the affiliated restaurant, recognized my son and drew our attention to the allergen. We had asked about the crust but didn't think to ask about the sauce.
