I've been a celiac for more than 30 years and a Type 2 diabetic for five. I
am also lactose intolerant. Do I stick to my diets -- you bet! Since being
on a strict celiac diet there have been no migraines, no intestinal problems
and a general feeling of well-being. On the diabetic diet I've lost 30
lbs., and am now controlling the disease with diet -- without medication.
(By the way, Type 1 diabetes is juvenille diabetes; Type 2 is adult-onset).
Found that cutting out fatty foods from my diet also cut sugar cravings
considerably and aided in my weight loss, as well.
As for the lactose intolerance, I drink either soy milk, Lactaid or Dairy
Ease milks. My biggest problem is chocolate. Since I love chocolate milk I
found that Nestle's makes Nesquick Chocolate Mix sugar-free. It's delicious
and certainly enhances skim milk. Snacking for a diabetic is quite
difficult. One of the best snacks, that's low on carbs, is salsa and a few
corn chips; a small apple with a small piece of cheese can also satisfy a
hunger; finally, air popped popcorn with seasoned salt is an excellent
satisfier.
Ginny, there are so many specific diet-based foods out there that I miss
nothing. Also,Amy's Kitchens makes some of the best gluten-free frozen
meals around. Their new bowl meals are excellent. To get a list of
products just write to: www.amyskitchen.com. Many are fairly low carb. Of
course, diet sodas are a help, but if you want to avoid artificial
sweeteners, try iced seltzer or club soda with 1/4 cup of fresh fruit juice.
