Bull calves are castrated for several reasons, the biggest
being to reduce agressiveness. Young bulls spend a lot of
energy play fighting, so they do not put on as much fat as
steers besides being more dangerous. They do put on more
muscle, and would I suppose be lower in fat. Older bulls are
said to have a tougher, stronger tasting meat, they usually
end up as bologna and the like.
