I make a zip lock bag of mixed veggies: broccoli, carrots, radish, cucumber,
zucchini, etc., and precook salmon, chicken breasts or pork loin. And a small
fruit (apple, pear, plum) for dessert. Having a few veggie bags in the
fridge makes it convenient to grab a bag and dump it on a plate next to my
protein. Veggie omelets are great too.
I try to limit eggs to once a week.
