Ok, this is the last one (until I'm successful at Wasa!). My daughter was
complaining that my flatbread was TOO savory and I toasted it to be a bit
crispy, and she wanted something SOFT that could work for a pnut butter and
jelly sandwich. And someone else asked about something that would work for
hot dogs. Sooo ...

Mix in a bowl:
1 cup rice flour
1 cup tapioca flour (I used Bob's Red mill this time)
1 t soda
1 t baking powder
1 t salt

Add:
1 cup yogurt
Enough water to make a spreadable paste (for me it was about 1/2 a cup, but
it depends on the yogurt).

Whip:
3 egg whites, and fold the paste into them.

The mix should be very light and spreadable. Spread it on your Exopat or
parchment paper about 1/4 inch thick. You can make them into little rounds
if you want. Bake until not shiny any more. Stop while they are still white
(not browned) for very soft flatbread, suitable for the younger set.

I spread peanut butter and jelly on one and made it into a "pnut butter
taquito". Or fold one over for a pnut butter/jelly taco. Or spread with
butter and honey. Or dip in baba-ganoush for the adults. Or wrap it around
a sausage or hot dog.

For mine I sprinkled meal (something like cornmeal) and baked a little
longer for a 'tougher' bread.
