I am in Canada and following a GFCF diet.

I would like to bake some cookies. Normally, I would have avoided
the "chemicals" and used butter for the fat, but butter is made with cream,
so I'm looking for a GF shortening to bake with. The ingredients listed on
the packages at the store include mono and diglycerides and citric acid. I
have heard that these two ingredients can be manufactured from a wheat base.

I know for sure I have reacted to the mono and diglycerides in a package of
instant mashed potatoes, so I am unsure about trying the shortenings.

Also, I recently read on the listserv about someone baking peanut butter
cookies with Crisco Golden shortening. I think Criso had the questionable
ingredients - not sure.

Has anyone called the manufacturers of shortening?
Could I use liquid corn oil to bake cookies ?
While we're on the topic, does anyone know of a margarine I could use?
