Thanks for all the feedback on the ingredients in this cookie recipe. I'm told that everything I used is GF.  I merely modified a regular cookie recipe, and in my humble opinion, they are Yummy!  My very surprised (and in celiac-denial) husband loved them.

Peanut Blossoms

1/2 c. sugar
1/2 c. brown sugar
1/2 c. peanut butter (ie. Jif, Skippy, natural PB)
1/2 c. shortening (I used Crisco butter flavored)
1 egg
1 t. pure vanilla extract (I used McCormick's Pure Vanilla Extract)

Cream the above ingredients together.

1 3/4 c. Bob's Mills GF all purpose baking mix
1 t. baking soda
1/2 t. salt
1/4. t. xanthan gum (I added this just in case!)
2 T. milk (I used a lactose-free milk)
48 Hersey's Kisses

Slowly add in remaining ingredients.  Roll cookie dough into 1 1/4 inch balls and roll them in granulated sugar. Place on an ungreased cookie sheet.

Bake 375 degrees - 10-12 minutes.  Remove from oven and press Hershey kiss into center of cookie.    Makes 48 cookies.
