Drop Cookies from Cake Mix!
It's been two years and literally thousdands of cookies since I posted
the original technique for using cake mixes to make cookies. Since
then, I've added a few new tricks to make them even more
intersting...and no one suspects just how easy they are. I ran a coffee
hour for a large church in NYC and baked about 5 recipes a week and had
to come up with interesting twists [just so that I wouldn't get bored]
Basic technique...
preheat oven to 350 and line cookie sheets with parchment paper.
ingredients:
1 box cake mix
2 eggs
1/2 cup oil or butter [melted and cooled]
1 cup chopped nuts, chocolate chips, dried fruit and/or coconut
grated rind of lemon [opt]
combine all ingredients in mixing bowl, using paddle and mix well. Using
mini ice-cream scoop, drop onto prepared cookie sheet. Bake one sheet
at a time for 10-12 min or until bottom is golden [not brown[. Leave on
sheet for 2 min to firm up before removing to rack to cool completely.
Store in air-tight tin. Makes 3 dozen.
Now comes the fun...
suggested combinations
yellow cake mix, juice and rind of 1 lemon and 1 cup coconut
[the favorite of the coffee hour...even preferred above choco chip]
chocolate cake mix, 1 tablespoon instant coffee, 1/4 ground cloves,
1 cup chcolate chips, 1 bar white chocolate, chopped. 1 cup nuts
yellow cake mix with 1 teas cinnamon, 1/2 teas nutmeg, 1/2 teas
allspice, 1/4 teas cloves, 1 cup raisins
You can use this technique to make cookies you couldn't make before.Look
at the recipe of a favorite cookie....how many dozen does it make? One
box of cake mix makes 3 dozen cookies. Adjust the amt of spices and
other ingredients for 3 dozen. Let the cake mix be the basics and just
add the other ingredients. I used this to make Martha Stewart's
lemon/thyme cookies. To one yellow cake mix, I added the juice and rind
of one lemon and 1Tablespoon dried thyme and followed the basic
recipe...the result, a very sophisticated cookie.
