I received 41 responses to my questions about getting through security and customs with carry-on food while en route to Holland.  Thank you all.  

No one had any problem getting through security or customs.  However, some people did not declare the food at customs, kept it in the original packaging, and packed it in their suitcases.

Several people suggested only carrying-on the plane what I needed to eat while in transit, since it is easy to purchase GF food in Holland.  

Other suggestions included:
--Checking ahead with customs and with the Holland embassy
--Checking with the airline
--Avoiding carrying-on fresh fruit, meat, or veggies
--Avoiding flour because of the recent anthrax scare
--Carrying a note from the doctor specifying that I have celiac disease that requires a special diet and that I am carrying food that I need for the diet
--Getting a note written in Dutch, so I can use it at restaurants
--Requesting GF meals from the airlines and tour directors

Specific suggestions for my carry-on included:
--"Sandwiches, crackers with cheese, things that can be clearly inspected if needed, are the best choices."
--"I. . . usually bring 2 Thai spring rolls (rice paper wrapped cold rolls from the Thai restaurant) and something crunchy to snack."
--"In the pack I had 2 ham sandwiches, apples, rice cakes, yogurt, and a block of cheddar cheese."
