Here are the responses I had from members.  They were all positive:

Just ate at the one in northern California.  The waitress was very
helpful.  She went to the kitchen and discussed with the chef the dishes
that I could have.

I hope your experience will prove to be a good one.

We have one in Salt Lake City.  They actually recently gave me a list of
the menu items they CAN'T make gluten-free.  This includes some of their
noodle dishes (only some, not all), some soups, honey crusted dishes,
egg rolls, desserts etc ( I would include the list, but I can't seem to
find it at the moment).  The chef at this one is very concerned with
patron's needs, and all I have to do is tell the waiter/waitress that I
want the items gluten-free and they have them made that way.  They even
have gf soy sauce in the back to cook it with!  I have eaten there a
number of times and have never had a problem.  The server who brings the
meal even says "gluten-free Chang's spicy chicken" or whatever we have
ordered.   I don't know if this holds true for ALL PF Chang restaurants,
but it has been a good dining experience for me in Salt Lake City.  You
can also look at the web page WWW.GFUTAH.ORG, go to the restaurant
guide, click on Utah Reviews, and PF Chang will come up as one of the
options.  They have quite a section on PF Chang.  I've been very
impressed with them.  Good luck.

I just ate at a PF Chang's the other night.  The server wasn't familiar with
CD but was able to tell me which dishes had no soy so I could pick from
several delicious dishes.  They had quite a few rice noodle dishes.

One kindly sent me a downloaded file with the gf menu, but cant read it as
I have an error on my Acrobat Reader.

To all:

I am sending an early summary of this restaurant.  Most wanted to know
where they are located.  Their website is www.pfchangs.com and they have
location information there.  I had one reply that mentioned a manager
said that there are no "all rice" noodles.  I e-mailed Changs again
about that and received an immediate reply from Paul Muller Corporate
Executive Chef that stated " our rice stick (angel hair) is all rice
flour.  It is the noodle we use in our Singapore noodles.  You can
substitute this noodle in any of our dishes.  A word of caution,
sometimes in different parts of the country we might have a substitute
label at times. Please inform your server of your condition and have the
chef check the label to be sure".

If any further information comes to me I will make another summary.

Hi Mireille,

I always have the Chang's Spicy Shrimp. This restaurant is very, very good
about treating you right. Just be sure to tell the hostess about your
situation and they will tell your waiter and usually the chef comes out to
talk to you. I've had many wonderful experiences there.

Yes, indeed, three of us apparently got a reply from a manager of Chang's
(with an apology for the delay as his wife had just given birth to their
first child!) with a list of many items that one can eat and various changes
and safe substitutions that one can ask for.  Very helpful.  If I can still
find it I will cut and paste it in here. Hold on.

Sorry I printed it off and erased it.  However, maybe one of the other two
recipients will still have it and would send it on to you.

I have had the mango chicken at PF Chang's without any reaction.
