QUESTION: Before going on the GF Diet, my daughter loved to eat the
Little Debbie's Peanut Butter Bars. Is there any gf substitute that
anyone knows about - either to buy or make?

I used to love those too. This will not be the same but at least has
peanut butter and chocolate: Orville Redenbacher's Chocolate Peanut
Popcorn Cakes spread with peanut butter. You can pack this in a
lunchbox by putting two cakes face to face so the peanut butter doesn't
get all over everything. The White Cheddar popcorn cakes with peanut
butter taste like those orange peanut butter snack crackers. The
popcorn cakes come in two sizes. Also, for a peanut butter and
chocolate snack, my daughter likes peanut butter M&Ms and Chocolate O's
cookies dipped in peanut butter.

My kid's like the Tiger's Milk bars. The ones that say protein rich or
peanut butter are gluten-free. You can get them in the health food
stores or in some markets.

I also have a daughter with celiac (diag in April) I have a recipe that
she loves and your daughter may like to try it.
Peanutbutter Bars
3/4 c karo syrup
3/4 sugar
1 cup peanut butter
6 cups Nature path Corn flakes (gluten free)
blend over med heat syrup and sugar
stir in peanut butter
add corn flakes and spoon onto a cookie sheet and cool
You might try melting choclate chips and blend in or top with them to
get the Little Debbie choclate taste.
