Light can affect fatty acids -- especially polyunsaturated fats that are
prone to rancidity. According to Mary Enig in Know Your Fats -- goose fat is
56% monounsaturated fat(oleic), 22 palmitic (saturated), 3 % palmitoleic
acid, 6 % steric acid, 10% linoleic acid and less than 1% of both linolenic
and myristic acids. Thus it should be quite a stable fat -- since the
majority of fatty acids are monos or saturates. Personally I would favor the
glass especially if the can is aluminum lined; also I feel that things keep
better in glass.
