Hi Tracy, welcome to the list.

Basically "frankenfats" are highly processed vegetable oils. They are
processed in various ways to make them last longer, but this alters their
chemical structure and makes them very bad to eat. There seems to be
widespread agreement about this now (e.g. I believe even the American Heart
Association is waking up to it).
