I believe you are right that calcium needs fat as well as D for
absorption. Wouldn't that be mostly saturated fat from animal foods? I
don't think the fat would have to be in the plants themselves as long as
you were eating animal fat regularly (like any wild human). I'm not
familiar with the flora of Northern Europe, but I'm sure there are
hundreds of edible species available during different parts of the year.
One doesn't need a large daily calcium intake since you stow it away and
hold on to it as you go. Where do you suppose paleo humans got their
calcium?
