Just finished the Jan 2002 issue of Analogue;Science Fiction and Fact.
If you want an interesting twist on one of many ways we may deal with
the celiac issue in the future read the short story "A Deeper Rest" by
Melissa Lee Shaw, pg. 96.  It also addresses, one aspect of the GMO
issue(genetically modified organism- in this case wheat).

Whatever you may think about the story, it is one more instance of
giving celiac disease more "air time"

You may be able to check the issue out from your local library or ask
for inter-library loan.
