Hi list,
I received 12 replies to my query on potato starch substitutes for Bette's
pop-over rolls. The most frequent suggestion was to substitute corn starch
for the potato starch, so I'm going to try that with my next batch. A few
suggested avoiding flours like soy and garfava because of the increased
density of these flours. I may still try a batch someday with garfava
flour, when I have time, just to see how they turn out.

years of culinary experience you shared.
