I just returned from an Alaskan cruise on Royal Caribbean.  This was my fifth
cruise, and the first one where I had trouble getting the dining room staff to
understand my needs.  I ended up going into anaphylaxis one night and spent a
few hours with the ship's medics.

NCL will be even more difficult than RCCL or HAL since you're not assigned to a
dining room table so you won't be guaranteed of having the same dining room
staff every night.  All I can tell you is to be extremely careful and detailed
in how you order your food, and don't eat anything that you think is
suspicious.  Always, always, always double check.  My food order the very last
night was:  prime rib, rare, rice with NOTHING on it, no baked potato, steamed
vegetagles with NOTHING on them.  I think it was the only night I didn't get
buttered vegetables.

Good luck!  It is possible, but you'll have to be very careful and ask lots of
questions.
