Subject: Cuban Dinner on November 1, 2003
A Taste of Cuba - Saturday, November 1
For ten years, the International Dinner was a favorite eastside
neighborhood excuse to eat out.
This International Dinner will be held on Saturday, November 1 at
Trinity Lutheran church, 1904 Winnebago St. There will be seating
available at 5pm and 7pm. Cost per person is $11 for adults and $5 for
children ages 4-12.
Most of the menu ingredients are generously donated by area businesses.
The meal is coordinated and prepared by Atwood Community Center staff
and volunteers and with help from the Madison-Camagüey Sister City
Association. Proceeds from the dinner will benefit the many programs of
the Center.
In previous years, the dinner featured foods from Greece, South
America, Italy, Yugoslavia and closer to home, New Orleans and Native
American. Local cookbook Author Terese Allen once again is lending her
expertise in helping the Center create a fantastic dinner.
The menu for this year's choice, Cuba, includes: Pollo Criollo-Creole
Chicken Fricasse (marinated in orange and lime juice and garlic,
browned, then simmered with onions, garlic, sweet peppers, tomatoes,
wine, capers, olives, raisins and cumin) or Calabaza Criollo(Creole
Squash), Frijoles Negros(Cuban Black Beans), Whipped Sweet Potato Bake,
Arroz Amarillo(Yellow Rice), Ensalada con Mojo Criollo(Tossed green
salad with Creole Garlic Dressing), Pan de Maiz(Cornbread), Flan de
Coco(Coconut Cake with Tropical Fruit Sauce), Café y Jugo de
Frutas(Coffee and Tropical Fruit Juice).
