Who are you going to believe your body or your doctor?
While you might not have CD -- most people don't -- an allergy can be very
serious. It seems to me that if your symptoms dramatically cleared up with a
wheat free (not to be confused with gluten free) diet, and your doctor
dismissed the result, you might consider dismissing your doctor.
Your call of course, but all I can say is that if I knew then (15 years ago)
what I know now, I would have made far different choices in my life.
