Here are the two responses I received. My intent, not clearly defined, was
to find something like Arab/Israeli pita (pocket bread). I did find yeast
free rice bread at Kinnikinnick, so that terminated my search for the pocket
bread. I certainly did not want to bake!! I've been there, done that and
do not want to revisit the catastrophe! *G*

I am not exactly sure what constitutes unleavened bread. We buy a bread
from
a bakery in Deland, FL, made from millet and brown rice that they do not use
yeast in - baking soda or powder, I think. Our local health food store in
Ohio now carries it and it is a best seller. It is called "Millet special".
They also make a "Millet Regular" that contains yeast. It is the favorite
bread of many celiacs in the area. You have to buy 24 packages of products
when ordering directly.
